Ultimate Oatmeal Cookie

I have a personal grudge against oatmeal raisin cookies (me irl), so I made it my mission to make the ultimate oatmeal cookie. I started with Claire Saffitz's oat and pecan brittle cookies and made 4 additional variations with different fillings.
- Dried Cranberries
- Dried Cranberries and Butterscotch Chips
- Dried Cranberries and White Chocolate Chips
- Dried Cranberries and Peanut Butter Chips
My favorite is the batch with peanut butter chips, but they're all fantastic. I think one of the things that makes this recipe better than a traditional oatmeal cookie is that is uses less oats (and more candied pecans. And browned butter). The result is a very chewy and savory cookie with bits of sweetness from the candied pecans and various flavors of chips and tartness from the dried cranberries. With a little flaky salt on top, these cookies are a delicious combination of heterogeneous flavors and textures.
The different fillings don't affect the overall taste as much as I thought they might. It seems like more filling can be used for the same amount of dough for a more exaggerated difference. I wouldn't mind more of all the fillings - cranberries, chips, and pecan brittle bits - in each bite. More research is required to find the best ratio of fillings to dough.
